Melina’s Fresh Pasta is seeking outgoing, friendly, reliable and detail-oriented people to join our team. Melina’s Fresh Pasta is the only fresh pasta shop in the Triangle – now in our 15th year. We make ravioli, cut pasta, gnocchi, sauces, baked meals and more. Winner of Best Overall Made in NC product and Best of Durham 2022, 2023, 2024 & 2025.

Ideal candidate will have kitchen, production or manufacturing experience but we will consider training and enthusiastic candidate who is willing to learn. While this is hard work, we do have a fun and welcoming environment. Currently this position is estimated at 25-35 hours per week but if full time hours are desired, we anticipate an increase in hours as we get into the busy season this fall so let’s talk! Weekday, daytime hours – if you are looking for a break from a hectic restaurant kitchen and working nights and weekends - we may be the place for you. Must be reliable, punctual, detail-oriented, and possess the ability to take direction effectively while working toward goals independently. Current staff tenure is 3+ years - come join our pasta family.

Responsibilities

Pasta Production

Operate pasta making & kitchen equipment to make pasta dough, fillings and cut pasta
Clean production machines & parts and re-assemble machines
Ensure quality of final products, inspect products & notify management of quality issues

Packaging & Light Production

Accurately package pasta, sauces etc.
Follow recipes to Lasagna/sauces/ filling ingredient prep/Pizza dough/etc
Accurately label all products
Keep kitchen & prep areas clean & organized at all times (clean as you go)

Daily cleaning of production space, dishes, wares, equipment, tables

Wash & Sanitize Dishes
Take out recycling/trash (daily)
Take out garbage and recycling bins to curb and bring to back when empty (weekly-Wednesday)
Clean floor – sweep, mop, run floor Scrubbie machine
Operate a power washer

Requirements

Previous production, kitchen or manufacturing experience preferred
Not Required but will require a longer training period without experience
Slightly Crazy Attention to detail
Must be able to read and follow recipes
Work within existing standard operating procedures
Follow all food safety & sanitation procedures carefully
Accurately complete production and ingredient inventory logs
Ability to work standing for 6 to 8 hours per day
Ability to lift 50+ pounds
Can work independently after training
Sense of Humor (must laugh at owner’s jokes)

If desired, evening and weekend hours selling pasta at markets or helping with pasta making classes would be added to the schedule.

Starting Pay $17/hour - After completion of 90 day probationary training period, there will be a 5% pay increase plus eligibility for monthly bonus plan.
