FRESH INGREDIENTS – NO COMPROMI
All of our pastas are made from scratch. Minimal, but quality, ingredients are used – most ravioli fillings have only 3-4 ingredients.
Fresh vegetables are peeled and lemons are zested by hand (115 per batch for Lemon Ricotta filling). Cheeses are grated from blocks by hand to eliminate the fillers and additives used to prevent clumping.
We use Durum Wheat Flour and Semolina Flour in all of our pastas.
Our Gnocchi are made with fresh ricotta, no potato. There are only 3 ingredients – ricotta, durum wheat and salt. Ricotta Gnocchi are much lighter than those made with potato which can be gummy and heavy. Once you try them, you won’t ever go back to potato gnocchi!
Lasagnas are assembled layer by layer using freshly made sauce and fillings.
We use only the finest San Marzano style tomatoes and cook our sauce for 3 hours. Our sauce has a little kick and a little sweetness. We do not want Nonna to chase us with a wooden spoon for adding in sugar so we do NOT use any, ever.
